Baby Cabbage Salad with Red Rose Apple

Ingredients:
- Baby Cabbage: 200 g very thinly sliced/ fine shreds
- Red RoseApples: 2, peeled and thinly sliced
- Walnuts: 50 gm, toasted on a baking tray in the oven
- Almonds: 50 gm, soaked, peeled and grated
Dressing:
- Apple Cider Vinegar: 3 tablespoons
- Cold-pressed Olive Oil: ¼ cup
- Manuka Honey: 2 tablespoons
- Salt and crushed pepper
Process:
- Whisk together all the dressing ingredients
- Pour them over the shredded baby cabbage and red rose apples
- Mix well and add walnuts and grated soaked almonds
- Fold them in and serve
If you’re a vegan, the soaked grated almonds are a great replacement for cheese. You can also add grated dairy-free/ vegan cheese instead of almonds
