Baby Cabbage Salad with Red Rose Apple

Planning a salad lunch with our girl gang? Waiting for the perfect recipe to a refreshing start to the work week? Give your salad bowl a makeover with wholesome nutrition and a burst of flavour with the crunch from baby cabbages and the subtle flavours of red rose apples.

Ingredients:

  • Baby Cabbage: 200 g very thinly sliced/ fine shreds
  • Red RoseApples: 2, peeled and thinly sliced
  • Walnuts: 50 gm, toasted on a baking tray in the oven
  • Almonds: 50 gm, soaked, peeled and grated

Dressing:

  • Apple Cider Vinegar: 3 tablespoons
  • Cold-pressed Olive Oil: ¼ cup
  • Manuka Honey: 2 tablespoons
  • Salt and crushed pepper

Process:

  • Whisk together all the dressing ingredients
  • Pour them over the shredded baby cabbage and red rose apples
  • Mix well and add walnuts and grated soaked almonds
  • Fold them in and serve

If you’re a vegan, the soaked grated almonds are a great replacement for cheese. You can also add grated dairy-free/ vegan cheese instead of almonds
